Little gem/spinach/ rocket/shredded kale/shredded cabbage

Pick a seasonal vegetable roasted carrot/squash/sweet potato/pickled beetroot

For a hearty base cooked lentils/beans/quinoa/brown rice/bulgur wheat/barley

Choose a herb mint/coriander/ parsley/tarragon/basil/fennel tops/celery leaves

Some texture and extras baked feta or pan-fried halloumi/ mixed toasted seeds or nuts/ spouted beans/ fried breadcrumbs/ croutons

Dressing basics

Oil (2 parts) olive oil/ hazelnut oil/ mashed avocado/ rapeseed oil/ coconut milk

Acid (1 part) lemon/lime/ grapefruit/ orange/ vinegars

Other flavours spices, mustard, parmesan, salt and pepper, miso, soy.
